Blueberry Muffins with Lemon Glaze Recipe

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 cups fresh blueberries

For the Lemon Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons lemon juice
  • Zest of 1 lemon

Instructions

Making the Muffins:

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream the softened butter with the granulated sugar until fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the flour mixture to the butter mixture alternately with milk, beginning and ending with the flour mixture. Fold in the blueberries gently.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
