Let’s get cooking!

Ingredients

  • For the Rice:
    • 1 cup short-grain rice
    • 2 cups water
  • For the Beef Patties:
    • 1 pound ground beef
    • 1/4 cup onion, finely chopped
    • 1 tablespoon soy sauce
    • Salt and pepper to taste
  • For the Gravy:
    • 2 cups beef broth
    • 2 tablespoons soy sauce
    • 2 tablespoons cornstarch mixed with 2 tablespoons water (for thickening)
    • Salt and pepper to taste
  • For the Topping:
    • 2 fried eggs
    • Chopped green onions (optional, for garnish)

Instructions

  1. Prepare the Rice: In a medium saucepan, combine the short-grain rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the water is absorbed. Fluff with a fork and set aside.
  2. Make the Beef Patties: In a bowl, mix together the ground beef, chopped onion, soy sauce, salt, and pepper. Form the mixture into two or four patties, depending on your preference.
  3. Cook the Patties: Heat a skillet over medium-high heat. Cook the beef patties for about 4-5 minutes on each side, or until they are browned and cooked through. Remove from the skillet and set aside.
  4. Prepare the Gravy: In the same skillet, add the beef broth and soy sauce, scraping up any browned bits from the bottom. Bring to a simmer and stir in the cornstarch mixture to thicken. Season with salt and pepper to taste.
  5. Fry the Eggs: In a separate pan, fry the eggs to your desired doneness—sunny side up is traditional for Loco Moco.

Serving Suggestions

To serve, place a generous scoop of rice on a plate, top it with a beef patty, and pour over the savory gravy. Finish it off with a fried egg perched on top and a sprinkle of chopped green onions for a pop of color.
