The Magic of Homemade Blueberry Syrup
This syrup isn’t just for pancakes (though it’s divine on a warm stack!). Its medium viscosity makes it perfect for:
- Drizzling over ice cream
- Swirling into yogurt
- Adding a fruity twist to desserts
- Mixing into cocktails or mocktails
Ingredients
- 2 cups fresh or frozen blueberries
- 1/2 cup water
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- Zest of 1 lemon
- 1 teaspoon vanilla extract
Let’s Make Some Syrup!
- In a medium saucepan, combine the blueberries, water, sugar, and lemon juice. Bring the mixture to a boil over medium-high heat, stirring occasionally.
- Reduce the heat to low and simmer for about 10 minutes, gently mashing the blueberries with a wooden spoon as they cook.
- For that perfect medium viscosity, continue simmering for another 5-7 minutes, or until the syrup coats the back of a spoon.
- Remove from heat and stir in the lemon zest and vanilla extract. The aroma at this point will be absolutely intoxicating!
- Let the syrup cool for about 10 minutes, then strain through a fine-mesh sieve if you prefer a smoother consistency. (I personally love leaving some berry bits for added texture!)
Serving and Storage
Your homemade blueberry syrup will keep in an airtight container in the refrigerator for up to two weeks. For longer storage, you can freeze it in ice cube trays and thaw as needed.
