- 4 slices of beef top round or flank steak, pounded thin
- Salt and black pepper, to taste
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 2 tablespoons olive oil, plus more for searing
- Kitchen twine, for tying

- 2 cloves garlic, minced
- 1 (28-ounce) can crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- Red pepper flakes (optional)
Instructions:
- Prepare the Beef:
- Lay out the beef slices on a cutting board. Season each piece with salt and pepper.
- Evenly distribute and spread minced garlic, grated Parmesan, and chopped parsley over each slice.
- Roll and Tie:
- Roll up the slices tightly, starting at one end and rolling to the opposite end to encase the fillings.
- Use kitchen twine to tie each roll securely in several places.
- Brown the Rolls:
- Heat a few tablespoons of olive oil in a large skillet over medium-high heat.
- Sear the braciole rolls on all sides until they are browned, then remove them from the skillet.
- Make the Sauce:
- In the same skillet, add additional olive oil if necessary and sauté the chopped onion and minced garlic until translucent.
- Pour in the crushed tomatoes, oregano, and basil, stirring to combine. Season with salt, pepper, and red pepper flakes if using.
- Let the sauce simmer for a few minutes to start to thicken.
- Cook the Braciole:
- Place the browned braciole rolls into the skillet with the sauce. Ensure they are coated well and covered.
- Cover the skillet and simmer on low heat for 1-1.5 hours, or until the beef is tender.
- Finishing Touches:
- Carefully remove the twine from the braciole rolls.
- Dish up the braciole and top with the tomato sauce.
- Serve Warm:
- Serve the braciole with a side of pasta, polenta, or crusty bread to enjoy the delightful sauce.
