Creamy Mashed Potatoes Recipe

Today, I’m sharing my favorite recipe for slightly chunky, incredibly creamy mashed potatoes that will transport you to comfort food heaven.

Ingredients (Serves 4-6)

  • 2 lbs Yukon Gold potatoes, peeled and quartered
  • 1/2 cup unsalted butter, softened
  • 1/2 cup whole milk, warmed
  • 1/4 cup heavy cream
  • 2 tbsp fresh chives, finely chopped
  • 1 tbsp mixed fresh herbs (such as parsley, thyme, and rosemary), finely chopped
  • Salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Place the peeled and quartered Yukon Gold potatoes in a large pot and cover with cold water. Add a pinch of salt.
  2. Bring the water to a boil over high heat, then reduce to medium-low and simmer for 15-20 minutes, or until the potatoes are tender when pierced with a fork.
  3. Drain the potatoes in a colander and return them to the warm pot.
  4. Add the softened butter to the potatoes and mash gently with a potato masher or a large fork. Don’t overmash – we’re aiming for a slightly chunky texture!
  5. Slowly pour in the warm milk and heavy cream, stirring gently to combine. The warmth of the liquids will help them absorb into the potatoes more easily.
  6. Fold in the mixed fresh herbs, reserving the chives for topping.
  7. Season generously with salt and freshly cracked black pepper to taste. Remember, potatoes love salt!
  8. Transfer the mashed potatoes to a serving bowl and top with the chopped chives and a pat of butter.
