Eggnog Spiked Coffee

As I write this, Christmas is still a few months away but it is already at the top of my mind. What will I buy for everyone, what will I wear over the holiday, where will I celebrate it?  Questions abound and so do some of the things that I look forward to every year when the holidays start.

One of those things is Eggnog.  I’m not a huge fanatic of eggnog where I buy gallons upon gallons of the stuff when it finally arrives on store shelves but I like the occasional glass of eggnog as I put up a Christmas tree or decorate a window or do something else just as Christmassy.  It is a tradition of the season and one that most people enjoy.

Now, however, you can give an old tradition a new twist with this delicious recipe that combines amazing coffee with a touch of eggnog for an amazing Christmas treat.

Eggnog Spiked Coffee

What you need:

You will change the amount depending on the number of drinks you are making.  This recipe should make about 12 glasses of Eggnog Spiked Coffee depending on the size.

  • 8 cups of Eggnog
  • 4 cups of ice cream (you can mix up the flavor but most people prefer to use coffee ice cream)
  • 1/3 cup of light brown sugar (make sure it is firmly packed in the measuring cup)
  • ½ tsp of ground nutmeg
  • ½ tsp of ground cinnamon
  • 4 cups of coffee (you’re preferred blend)
  • Whipped Cream for topping

Spike the drink by adding a ½ cup of whiskey to the recipe before you serve it.

Mix it up:

  1. In a large mixing bowl, combine the sugar and spices.  Mix until they are well blended.
  2. Slowly add the coffee to the spices, stirring until the sugar and spices are dissolved in the coffee.
  3. Add the eggnog and blend until well mixed.
  4. Place in the refrigerator until you are ready to serve or for an hour at least.
  5. If you are serving it spiked, add the Whiskey before serving, chill for an additional half hour.
  6. Serve in glasses with a scoop of ice cream and topped with whipped cream.  Dust the top of the whipped cream with ground nutmeg or shaved chocolate if you use a chocolate ice cream.

Then sit back and enjoy a nice flavor-filled Christmas beverage.
