This week I was looking for a light and quick bite that would be easy to pull together after a long workday. Coraline was happy to be my “#1 helper” and help put dinner together. We picked up just a few items from the store and whipped up these super yummy crostini in virtually no time.
I started with a loaf of crusty French bread from the grocery store. I sliced them horizontally and slathered on a nice layer of salted butter, on both sides. It was hard to resist not eating all the buttered bread right there, but I foraged onward!
After I buttered those beautiful French bread rounds, I popped them in a skillet over medium heat and toasted them to golden brown. Of course at this point Coraline and I had to steal a toast round or two.
Once the toast rounds are ready to go, top them with a nice dallop of sweet peach preserves. Peach preserves are perfect for this recipe since they’re chunky and just sweet enough to create a depth of flavor to the dish.
Another short cut item I picked up from the store this day was a rotisserie chicken. I tore some pieces of the chicken breast off and added chunks of chicken on top of the peach preserves.
I topped the toast rounds with glorious creamy dreamy Brie cheese. I removed the rind before adding the Brie to the crostini. After this step I seasoned with salt and black pepper. After looking at the picture, white pepper could have been a prettier choice for entertaining- next time!
Once the rounds were all assembled, I popped them under the broiler for 3-4 minutes to melt the Brie and warm everything up. I was surprised how much my husband loved these! They’re sort of the perfect summer appetizer of both sweet and savory, and paired lovely with a cold glass of white wine. I also served them with a light arugula salad which added a nice peppery touch to offset the sweet.
It’s only been a few days and my husband has already asked for another batch!
Recipe:
1/2 loaf of French bread
4 tablespoons of salted butter
1 chicken breast, shredded or torn in pieces
1/4 cup of peach preserves
1/4 round of Brie cheese
Salt & Pepper to taste
Directions:
Heat skillet over medium heat. While pan is warming up, slice French bread into horizontal rounds. Butter both sides of French bread and toast in skillet until golden brown. Remove from skillet.
Top toasted rounds with a spoon of peach preserves. Lay pieces of chicken on top of preserves. Slice pieces of creamy Brie to top off the toast rounds. Don’t forget to salt and pepper to taste at this point!
Pop under broiler for 3 minutes or until cheese is melted and crostini is warmed through.
